Kuzca comes from Santiago Matatlán in the state of Oaxaca, in southern Mexico. The town calls itself the “world capital of mezcal”. There the Espadín agave cooks for days in an earth pit over wood and glowing stones, a tahona crushes it, fermentation is open with wild yeasts, and it is distilled in a copper still. Around 85 % of all mezcal is made from Espadín: the reference all others are measured against.

Worth knowing

  1. 01The smoke isn't an ingredient, it's the oven: the agaves cook for days in an earth pit over wood and glowing stones.
  2. 02The worm in the bottle was a marketing device. It has no place in good mezcal.
  3. 03Certified kosher.

Origin and production

Distilled by Kuzca, Palenque Casa Montaño · Santiago Matatlán, Oaxaca

The piñas cook for three to five days in a conical earth pit over oak and volcanic stone. That is where the smoke comes from. A tahona, a stone wheel weighing several tonnes and pulled by a horse, crushes the cooked agave. Fermentation is open with wild yeasts, and distillation takes place in a copper still. Only the heart of the distillate goes into the bottle.

“Para todo mal, mezcal, y para todo bien, también.”

FAQs

How are tequila, mezcal and raicilla best enjoyed?

Neat, at room temperature, from a small glass with an opening, such as a copita or a nosing glass. In small sips, without salt and lime. This is where the agave and the craft come through most clearly.

How long does an opened bottle keep?

Tightly closed, stored upright and in the dark, around a year without any noticeable change in flavour. Unopened, practically indefinitely.

Is ID required on delivery?

Yes. We only sell spirits to adults. The courier hands over the parcel only on presentation of ID.

What does additive-free mean?

No glycerine, no flavourings, no other additives. The houses we work with confirm this in writing. The glass holds only what comes from agave, water, yeast and time.

What happens if a bottle arrives broken?

Please get in touch within 48 hours of delivery at info@mecanova.de with a few photos: the outside of the box, the shipping label with tracking number, the padding and the damaged bottle in the box. Nothing needs to be returned, but please keep the box and the broken glass until we get back to you. We send a replacement or refund the amount.

Can an opened bottle be returned?

You can withdraw from the purchase of unopened bottles within 14 days. Our bottles are sealed: if the seal has been opened after delivery, withdrawal is excluded, because for hygiene reasons we cannot resell an opened spirit. Where there is no seal, you owe compensation for the loss in value of an opened bottle. Details are in the withdrawal policy.
